"Spicy Herb-Rubbed Flank Steak with “Roasted” Red Bliss Potatoes And Onions" 2 Lbs Skirt Steak or Flank Steak Serves 4 pp
Marinade -
½ Cup Olive Oil
¼ Cup Worcestershire Sauce
¼ Cup Sherry Vinegar
2 Tbsp Chopped Garlic
Seasoned Rub –
2 Tbsp Onion Powder
3 Tbsp Thyme, Chopped Fine
3 Tbsp Rosemary, Chopped Fine
1 Tbsp Red Pepper Flakes
2 Tbsp Olive Oil
Kosher Salt & Cracked Black Pepper to Taste
1. Combined all ingredients for marinade. Mix well and cover Steak. Let marinade for 2 hours and flip occasionally.
Take out of marinade and pat dry with paper towel.
2. Combine all ingredients for the rub and cover Flank Steak generously.
3. Have grill turned on to high heat. Grill 5 to 7 minutes on each side for medium rare.
4. Take Steak off fire and let rest for 3 to 5 minutes. Slice Steak thin, against the grain on a sharp angle
For Potatoes and Onions
• 12 Red Bliss Potatoes, washed and sliced ¼” thick
• 2 Large Vidalia or other sweet Onion, peeled and sliced ½” thick
• ¼ Cup of roughly chopped Thyme
• 1/3 Cup Olive Oil
• 3 Tbsp Balsamic Vinegar
• Kosher Salt and Cracked Black Pepper to Taste
• 1 Large Sheet of Aluminum Foil
1. Mix all ingredients together and wrap in aluminum foil
2. Cook on high heat grill for about 20 to 25 minutes or until potatoes are done
